Slide Cake
New Zealand

300 degrees 30 minutes

Cream together:
4 ounces butter – ½ a cube
¾ cup sugar

ADD and mix well: ADD and mix well:
1 egg 1 cup flour
2 Table. Dark Karo Syrup 2 teasp. Baking powder
1 cup golden raisins


Spread on a cookie sheet , (about 9’ X14”), and bake. Thin and chewy.




SIMPLE STONE FRUIT & BERRY CAKE WITH CREME FRAICHE

1 1/4 Cups flour 1tsp Vanilla
3/4 cup Sugar 4 ozs. (half bottle) Creme Fraiche
1tsp baking powder 2-3 cups sliced seasonal fruit and
3 1/2 ozs. butter melted berries (tinned drained or fresh)
2 Eggs, lightly beaten 2Tbps Sugar

STEP1= preheat oven to 350~.In a bowl combine flour, sugar, baking powder,
melted (but cooled)butter, eggs and vanilla. Place the mixture into a
greased loos-bottomed 10 inch cake tin

STEP 2=Blend together creme Fraiche and raw sugar, and dollop onto the
cake in a random fashion.
Place sliced or( drained well if canned )on top of the cake. Leave skins
on fresh plums, apricots and nectarines. Pile it on and press down where
necessary and finally sprinkle with the last amount of sugar over the
fruit. Bake 350~ for 60mins

STEP3= Serve with remaining Creme Fraiche blended with a little Orange
juice.

Creme Fraiche
2 teaspoons sour cream 1 cup heavy cream

Put in jar, shake until mixed and let set at room temperature 1 or more days until thick. Then use or refrigerate

This is a nice quick cake slice.

Soak seedless dates in lemon juice, then mash them up in juice and put on a pre rolled sheet of Sweet Short Pastry

Top with another sheet of pastry and bake till golden brown.

Cool and ice with lemon icing, its so easy to do, and one can put any filling in it.

Can use any kind of fruit filling and frosting.
